Creamy, tart, lemony - this simple dip is the perfect addition to any appetizer. It's made with vegan feta, roasted garlic, lemon juice, vegan crème fraîche and plenty of fresh herbs. Roasted garlic adds a hearty flavor without being too sharp or punchy like fresh garlic. Dip it with fresh baguette, warm pita bread or crunchy crostini.
It's so versatile you could even use it for sandwiches or soups.
Start by drizzling the garlic cloves with olive oil. Roast them in an oven-safe dish at 180° for 30 minutes.
In the meantime, zest lemons and chop some of the herbs. Set it aside.
Once the garlic is done roasting, gently squeeze out the garlic cloves into a food processor or blender.
Add the vegan feta, lemon juice, vegan crème fraîche, olive oil, agave syrup, a bunch of basil and parsley as well as salt and freshly ground pepper. Blend until smooth.
Serve with lemon zest, extra virgin olive oil and chopped herbs that we set aside at the beginning. Enjoy with some fresh bread.
