As an American one of the indicators that autumn is approaching is when coffee chains bring out their pumpkin-themed beverages. The pumpkin spice latte is probably the most celebrated of all seasonal drinks and while I love going out to buy one as a treat, I can make a very similar latte in the comfort of my own home.
Add the water, sugar, and ground spices to a sauce pan on medium heat and stir constantly. In about 5-7 minutes the mixture will thicken to a syrup and the sugar will develop a slightly caramel flavour. Remove from heat when ready.
Prepare the two shots of espresso and heat (and optionally, froth) the milk.
Add two teaspoons of the pumpkin spice syrup to each cup and pour over the espressos. Add milk and top with more cinnamon.
Store the remaining syrup in a clean jar in the fridge for up to a week. Add to coffees, teas, or desserts for a warm spiced flavour.
