Asparagus is a wonderful spring vegetable whose beauty should be shown off. A simple vegan tart with a garlic roux, dill, mint, and lemon zest is the perfect way to display this green veg and comes together in under 30 minutes.
To prepare the roux, finely mince the garlic. Combine garlic, vegan creme, and flour in a pan and whisk continuously on low heat. Continue to stir until the mixture bubbles and thickens (about 3 minutes). Remove from heat and allow to cool.
Roll out the pastry dough and spread out the garlic roux, leaving a 2cm border around the edges. Sprinkle salt and pepper over the roux.
Wash, trim, and dry the asparagus before arranging on the pastry dough.
Bake for 15 minutes at 200C until the pastry is golden and the asparagus has cooked through.
Top with dill, mint, and fresh lemon zest before slicing and serving.
