No one wants to stand over a hot stove in summer but protein often needs to be cooked (think meat, eggs, chicken, tempeh, etc). Enter: silken tofu. Silken tofu needs no cooking, is protein rich, and serves as a vehicle for whatever sauce you want to dress it in. Served here with avocado and simple soy dressing, it is a perfect companion to rice, noodles, or as part of a salad bowl.
Open, drain, and cut the silken tofu into slices. The tofu is delicate so handle it gently to avoid breaking it. Transfer to a serving dish.
Open and slice the avocado and tuck the slices between the slices of tofu.
Top the tofu and avocado with soy sauce, sesame oil, and finely chopped spring onion greens. Optionally add chili oil or chili flakes. Serve cold immediately with rice or noodles.
