Preheat the oven to 200 celcius degrees. Wash the pumpkin and cut it in half. Remove the seeds with a spoon.
Cut the pumpkin halves into smaller wedges, 4-6 pieces depending on the size of the pumpkin. Place the wedges on a baking tray and drizzle with olive oil. Sprinkle with salt and pepper. Bake in the oven for about 20 minutes, until golden and soft.
Place each wedge on its own plate, top with generous amount of arugula, drizzle with olive oil and season with salt and pepper. Crumble the vegan feta and crush the walnuts and add on top of the pumpkins.
