Wash and slice the plums in half. Remove and discard the pits.
Add the halves to a sauce pan along with sugar, water, lemon juice, and wine. Simmer on medium-low heat for 5-10 minutes until plums are softened through. Stir frequently to prevent sticking. Remove from heat and cover with a lid to keep warm.
Meanwhile, add all ingredients for the spiced cream to a bowl and mix using an electric beater. Mix for 3-5 minutes until the cream is whipped into stiff peaks. Careful not to overmix.
To a small pan add butter, oats, and chopped cashews. Toast over medium heat until the oats are golden and fragrant.
Plate the still-warm plums in a serving bowl along with a generous serving of the spiced cream. Top with the warm oat crisp and add the remainder of the wine glaze from the plums. Serve immediately.
